Banana Muffins (Healthy)  by Jesse J.
  • 1 1/4 C whole wheat flour
  • 3/4 C quick oats
  • 2 1/2 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/2 tsp. salt
  • 2-3 Tbsp Honey
  • 1 egg, beaten
  • 3 Tbsp Oil
  • 1/2 C milk
  • 1 C mashed, very ripe bananas (about 2)
  • Optional: chopped nuts or chocolate chips
1. Combine flour, oats, baking powder, soda, salt.
2. Add egg, oil, milk, honey, bananas. Add nuts or choc. chips, if desired.
3. Stir only until dry ingredients are moistened.
4. Fill greased muffin cups 2/3 full. Bake at 400 degrees for 15 mins. or until done. 

Bread Recipe (The "Bread Lady's" Recipe)  by Sarah H.
From Start to finish in 1 hour!
Use this recipe for making: Loaves, cinnamon rolls, pizza crust, rolls, braids and dessert breads.
  • 10 1/2 cups white bread flour (do not use all purpose flour)
  • 1/2 cup sugar or brown sugar, honey or molasses
  • 1 tbsp salt
  • 3 rounded tbsp SAF instant yeast (will rise only once)
  • 3 tbsp of liquid lecithin (squeeze 3 quarter sized circles right into the bowl, because liquid lecithin is so sticky, it will stick to everything. Do not measure.)
  • 4 cups hot tap water (as hot as you can get it, so it will disolve the lecithin and yeast. It will not kill the yeast.)
Mix all dry ingredients togehter and turn mixer on for a few seconds. Add lecithin and water. Mix for 1 minute and check consistency. Dough should be very sticky and stick to sides of bowl at least half way up. (If dough is too dry, add more water. If dough is too moist, add more flour.) Mix for 5 minutes. (Do not add water of flour to the dough after it has finished mixing.) Spray counter and pans with pam or olive oil. Make sure your hands have oil on them before the dough is removed from the mixer. Take the dough and place it on the counter and cut into 4 equal parts for bread loaves. Shape loaves and cover with a dish towel. Let rise 25 minutes.
Bake at 350 for 25 minutes.


Carrot Raisin Bread (MiMi's Cafe)  by Janet T.
  • 1 ½ cups Flour                      
  • 1 teas. Baking Soda                  
  • 2 teas. Baking Powder        
  • 2 teas. Cinnamon                 
  • ½ teaspoon Salt 
  • 1 cup Vegetable Oil 
  • 1 ½ cups Brown Sugar (firmly packed)
  • 3 Eggs                    
  • ½ cup Canned Crushed Pineapple, drained
  • ½ cup Chopped Walnuts                   
  • ½ cup Raisins                                                
  • 1 cup shredded Carrots 
Sift first five ingredients into a mixing bowl. In a separate bowl, whisk together the oil, sugar and eggs. Stir the liquid mixture into the flour; mix well. Add last four ingredients; pineapple, walnuts, raisins and carrots. Stir again. Grease and flour a 9" square pan or four mini-loaf pans. Fill the pans 2/3 full with batter.
Bake at 350 for about 40 minutes (Mini-loaves take about 30 minutes.) 


Corn Bread (Best Ever) by Dia B.
  • 2 sticks of butter
  • 2- 1/4 cup sugar
  • 4 eggs
  • 2 cups of cornmeal
  • 1- 3/4 cup flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 2 cups sour cream
Cream together butter and sugar. Add the 4 eggs, (beaten 1 at a time). In a separate bowl, add the cornmeal, flour, baking powder, and salt. Combine the 2 bowls together and add the last ingredient; sour cream. Grease and sugar a 9x13 pan.
Bake at 350 for 40 min.


Orange Rolls  by Billie W.
You can use any homemade roll recipe, but this is my favorite.
  • 2 Cup warm water
  • 3 Tbsp yeast
  • 2/3 cups Sugar
  • 2 - 3 Cups Flour
  • Let sit for 15 minutes
  • Add together
  • 3 eggs beaten
  • 1 sq butter
  • 1 tsp Salt
Add to the above then add flour until you still have a sticky mixture.  About 2-3 Cup flour add slowly you want to keep your dough a bit sticky.  Let raise 1 hour.
Orange mixture
  • 1 Squares Butter
  • 2 Cups Sugar
  • 3 orange peels grated
  • Beat well 
Roll out dough into a circle you can divide your dough into 3 parts so you circle are smaller.  Spread Orange mixture onto the dough and roll up like cinnamon rolls and cut into 2 1/2 inch and put into greased muffin tins.  Bake at 400 for 10 min. make sure you take them out of your pans immediately so they won't stick.  I loosen them and tip them on their side and let them sit in the pan a few minutes to cool them take them out. 
My family loves these.

Refrigerated Rolls  by Sally S.
  • 5 cups of flour
  • 2 eggs
  • 1 1/2 cubes of margarine
  • 1 1/2 tsp salt
  • 1/2 cup sugar
  • 1/4 cup warm water
  • 1 tbsp yeast
  • 1 1/2 cup boiling water
Mix Margarine, sugar, salt and boiling water. Let cool to lukewarm. Add eggs, yeast dissolved in 1/4 cup warm water and 1/2 of the flour. Beat until smooth and add remaining flour. Dough will be very sticky. Put into a large buttered bowl, cover with cloth and let rise until doubled. Place into refrigerator overnight or at least three hours if in a hurry. For croissants, roll into a circle and spread with butter. Cut with pizza cutter and roll from large end up to small and pinch the end. Place in buttered pan and let rise 3-4 hours.
Bake at 400 for 10-15 minutes.
  
Soft Dinner Rolls  by Martha M.
  • 1/2 liter milk (about 2 c.) -- if using "fresh" milk, scald it first and then cool
  • 1/2 c. sugar
  • 1/2 c. corn, canola, or other vegetable oil
  • 2 t. salt (I actually use 1 T. here in Italy because the salt doesn't seem as potent)
  • 2 eggs
  • 1 c. mashed potatoes (if you have them -- completely optional)
Leave for 10 minutes:
  • 1/2 c. warm water
  • 2 T. yeast
  • 1 T. sugar
Add flour a couple of cups at a time at first, then decrease to a cup, stirring well after each addition until it gets too thick to stir.  Knead for about 10 minutes or until very smooth.
Put in a greased bowl for about an hour.  Push down.  Let rise again if you have time or wait about 15-20 minutes.  Form into small balls about the size of a golf ball and place in a pan just so they are next to each other, almost touching.  Let raise about 30-45 minutes.  Cook in the oven for about 15-20 minutes at 350 (180 Centigrade).  Rub tops of rolls with butter when they are hot from the oven.


Sour Cream Banana (Nut) Bread  by Rochelle S.
  • 1 cup sugar
  • 1/2 cup oil
  • 2 eggs
  • 1 cup mashed bananas (2 medium)
  • 1/2 cup sour cream
  • 1 teaspoon vanilla
  • 1-1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • Nuts optional
Preheat oven to 350F. Grease and flour bottom only of a 9x5 loaf pan. In large bowl, beat together sugar and oil. Add eggs, bananas, sour cream and vanilla, blend well. Lightly spoon flour into measuring cup, level off. Add flour, baking soda and salt, stir just until dry ingredients are moistened.  I add nuts to this mixture. Pour into prepared pan.
Bake at 350F for 50 to 60 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes. Remove from pan. Cool completely. Makes 1 loaf.

Whole Wheat Bread  by Sally S.

Bread Loaves:
  • 1 1/2 cup powdered milk
  • 4 tsp salt
  • 1/2 cup oil
  • 3/4 cup honey
  • 3 1/2 cup hot water
  • 3 eggs
  • 2 tbsp yeast in 1/2 cup very warm water
  • 4 cups whole wheat flour
  • 7 cups white flour
Mix powdered milk, salt, oil, honey and hot water. Add eggs and mix again. Add yeast and wheat four. Mix for 30 seconds and add 3 cups of white flour. Mix for 5 minutes on speed. Add 4 more cups of white flour and mix on high speed for 5 more minutes.

Let sit for 15 minutes and then pour out onto floured counter. Divide into four parts with knife. Pound out bubbles for a few seconds and shape into 4 loaves or cinnamon rolls. Put onto greased bread pan and cover with towel for at least 30 minutes.
Bake at 400 for 30 minutes.

Cinnamon Rolls: 

Roll 1/4 of dough into a rectangular shape. Spread with melted butter and sprinkle a mixture of cinnamon and sugar on top of it. Roll it up and pinch along the edge. Cut rolls into 1 1/2 inch approx. and place into a 13x9 buttered pan.
Bake at 350 for 20 minutes.

Caramel Glaze:
  • 1/4 cup butter
  • 1 cup light corn syrup
  • 1 cup brown sugar
Warm all ingredients in saucepan until melted and pour into cake pan. Place cinnamon rolls on top and cover with cloth for 30 minutes or longer to rise.
